This loaded air fryer potato rounds are the best. An easy appetizer recipe that’s perfect for any occasion. Crispy loaded baked potato rounds with soft centers topped with cheese, bacon bits, sour cream and scallions, what’s not to love.
1Large Baking potatoes (Russets or any other one you prefer)
1TablespoonOlive oil
Potato Seasoning
½Teaspoon Garlic powder
½Teaspoon Granulated onion
¼Teaspoon salt
¼TeaspoonBlack pepper
Toppings
¼CupBacon crumbles/ bits(or 2 slices of cooked bacon crumbled)
6 Tablespoons Shredded cheese(I used a mix of cheddar and mozzarella cheese)
¼cup Sour cream
2Tablespoons chopped scallions or chives
Instructions
Prepare the potatoes
Wash and dry potatoes with paper towel. Slice potatoes into ¼ inch or ½ inch rounds.
Transfer to a bowl, add oil and potato seasoning then toss to combine. Make sure all potato rounds have been coated evenly.
Air fryer instructions
Place coated potato slices in the air fryer basket or rack then air fry at 400°F / 200°C for 15 to 18 mins or until potatoes are soft in the middle with browned and crispy edges.
Load it up with toppings
When potatoes are fully costed and crispy. Pull out air fryer basket and let it cool for 30 secs so you don’t get burned while adding the toppings.
Top potatoes with cheese and bacon. Push basket back into air fryer base and melt the cheese at 400°F / 200°C for a minute.
Transfer loaded potatoes to a plate then add dollops of sour cream on each round before topping off with scallions or chives. Serve immediately.
Oven instructions
Preheat oven to 400°F / 200°C / Gas mark 6
Place coated potatoes on a baking sheet and bake in preheated oven for 25 to 30 mins or until fully cooked.
Gently pull out baking sheet, top the potato rounds with cheese and bacon. Return the baking sheet to the oven and broil till cheese melts.
Bring out from the oven and add the other toppings and serve.
