This air fryer Christmas potatoes recipe is the perfect side dish for the holidays. Hassleback mini red doused with garlic butter is all you need to serve with your air fryer Christmas chicken, ham or Turkey breasts.
½ teaspoon ground rosemary (Dry rosemary that has been blended)
Instructions
Prepare the baby potatoes
Wash potatoes thoroughly. Pat dry with paper towels.
If using regular potatoes, slice off a thin layer from the bottom of each potato so it can stand upright. This isn’t necessary for baby potatoes.
Place the potato on a cutting board and carefully slice it lengthwise into thin, even slices, stopping about ¼ inch from the bottom so the slices stay attached.
Use a small spoon or spatula to gently fan out the slices. Repeat with the remaining potatoes.
Prepare the butter
Mix Olive oil, melted butter, salt, garlic powder, black pepper, ground dry rosemary and dry parsley , set aside.
Season the Potatoes
Transfer potatoes to air fryer basket or rack sliced side facing up.
Brush the potatoes with the seasoned butter mixture ensuring you concentrate in between the slices. Be careful not to break them apart.
Air fry
Air fry at 400°F / 200°C for 10 mins, shake basket or flip over whichever is easier. Then brush more seasoned butter on the potatoes.
Continue to cook for another 10 to 12 mins or until potatoes are fork tender.
Brush more seasoned butter before serving if you still have some left.
Notes
No need to preheat.
Creamy potatoes will likely cook in less than 20 mins. Start checking at 15 mins.
