Baby potatoes wrapped in bacon are always a delight to see on an appetizer table in a party or get together. These Air fryer bacon wrapped potatoes are even more fun and easier to make than in the oven and get ready in less than 20 mins.
2teaspoons sriracha sauce (use less to reduce the heat)
2 teaspoonsapple cider vinegar
salt & black pepper to taste
Instructions
Make the sauce
Mix all the sauce ingredients together till well combined then set aside on that counter if using immediately. Put in the refrigerator if you aren’t making the potatoes immediately
Prepare the bacon
Cut bacon in half crosswise and set aside
Prepare potatoes
Wash potatoes thoroughly and dry with paper towel no need to peel.
Assemble it all
Wrap each baby potatoes with half a slice of bacon and secure seam with tooth picks or cocktail sticks.
Repeat process till all potatoes have been wrapped.
Sprinkle with black pepper if using
Air fry
Place 16 bacon wrapped potatoes in the air fryer basket or the amount that fits.
Set temperature to 400°F / 204°C and bake for 13 - 15 mins flipping half way through. Let the potatoes rest for a minute in the air fryer then remove and cook second batch.
Serve with your favorite dipping sauce.
Notes
Recipe serves 8 and can easily be halved.
Use cold bacon. It’s easier to cut cold bacon without stretching and distorting the shape.
No need to preheat the air fryer. However start checking the second batch at 12 mins
Do not overcrowd your basket. Cook in batches if needed. I use a 5.8qt air fryer 16 fits in mine at a time. Put whatever amount that will fit in yours without overcrowding the basket.
