Making desserts in the air fryer is one of my favorite things to do. A bite into one of these gooey air fryer cheesecake chimichangas is all you need to try out this easy and delectable dessert in your air fryer. With just 6 ingredients you can make these in less than 20 mins.
The only thing you need to decide is what fruit filling you want to use. I used a homemade strawberry filling, you can use blueberries, cherry or even raspberry filling to make this easy air fryer chimichangas recipe.

Easy Air fryer Strawberry Cheesecake Chimichangas Recipe
Surprisingly, cheesecakes come out pretty well in the air fryer and these strawberry cheesecake chimichangas are no different. Xangos or Xango Mexican cheesecake desserts as they are sometimes called is simply cheesecake wrapped in tortillas to look like a burrito and then deep fried.

Chimichanga VS Burrito: what’s the difference?
This is a popular question because these two wraps are very similar in appearance yet different too.
Chimichangas are tortillas that are filled with your choice of fillings which could range from meats, beans, tomatoes and cheese. The filling is wrapped securely and then deep fried.
On the other hand, burritos are not deep fried, the tortillas are filled, wrapped and served cold or warm (from the microwave, stovetop top or air fryer)
Chimichangas are crispy on the outside while burritos are soft. Kind of like soft acid hard taco shells

Ingredients
- Soft flour Tortilla
- Cream cheese
- Sweetener of choice (choose from sugar, honey and sugar free substitutes like monkfruit-erythritol blend)
- Fruit pie filling of choice: while I used a strawberry filling, this apple compote will work too.
- Butter
- Cinnamon sugar
What’s the best cream cheese substitute for cheesecake
If you can’t find cheesecake for any reason, you can get away with using Mascarpone cheese or Neufchatel cheese as a substitute for cream cheese.
When using Neufchatel cheese, you will need to add some flour to the cheese mixture and you should pay attention to the liquid content because it contains more moisture than cream cheese.

How to make cheesecake chimichangas in the air fryer

Mix the cream cheese, sweetener, vanilla extract and egg with a hand mixer till smooth then set aside
Place tortillas in a microwave safe plate cover with a sheet of paper towel then microwave for 20 to 30 secs this will make the tortillas softer and more pliable
Divide the cheesecake mix into 4 portions Place warmed tortillas on the work surface and spoon in one portion of the cream cheese mix to the middle of the tortilla, add the strawberry cheesecake filling on top of the cream cheese mix,
Fold the filled tortilla into a burrito see how to fold a tortilla tutorial in the following section.Place filled tortillas in the air fryer, brush with oil and air fry for 8 to 10 mins and air fry for 8 to 10 mins
While the chimichangas are baking, mix the cinnamon sugar and set aside. When the cheesecake chimichangas are ready, bring them out of the air fryer and place on a plate. Next brush with melted butter then roll in cinnamon sugar. Serve as is or with your favorite topping.
How to fold a tortilla burrito style
- Place warmed tortillas on a flat surface Spread the filling in a line a little below the center leaving enough space at the sides. Be careful not to overfill.
- Fold in the side so that they are almost touching
- Holding the sides, with your four fingers bring up the bottom flap with your thumbs going over the side flaps and filling.
- Roll it over until it’s all wrapped. Secure with a toothpick or place seam side down when ready to air fry.

What to serve it with air fryer cheesecake chimichangas
Air fried Cheesecake Chimichangas are usually served with ice cream or whipped cream. They are also delicious enough to be served on their own because of the cinnamon sugar dusting they get after air frying. Serving cheesecake chimichangas with fruits isn’t uncommon as well.
How to store
Air fryer Cheesecake chimichangas are best enjoyed fresh but leftovers can be kept in the refrigerator for up to 2 days. Though these can be eaten cold, because of the filling you run the risk of the tortillas being soggy.
To fix this, pop the cheesecake chimichangas, into the air fryer and reheat at 350°F / 180°C for 3 to 5 mins.
Air frying Tips
- I didn’t preheat the air fryer. If you do, these will likely cook a couple of minutes faster than stated in this recipe.
- Do not overfill the tortillas or it will be difficult to fold.
- Warming the tortillas especially if they were in the refrigerator will prevent them from tearing when you are folding.

Air fryer cheesecake chimichangas
Equipment
- Cosori dual blaze Air fryer
Ingredients
- 8 ounces cream cheese
- ½ cup powdered sweetener (like sugar. I used a monkfruit/erythritol blend a natural sugar free sugar substitute)
- 1 Large egg
- ½ teaspoon vanilla extract
- 4 Large Flour tortillas (I used Mission’s low carb tortillas)
- ½ cup strawberry pie filling
- ¼ cup granulated sweetener of choice
- 1 teaspoon ground cinnamon
- 2 Tablespoons butter
- 2 teaspoons oil
Instructions
Prepare the cheesecake filling
- Mix the cream cheese, sweetener, vanilla extract and egg with a hand mixer till smooth then set aside
Prepare the tortillas
- Place tortillas in a microwave safe plate cover with a sheet of paper towel then microwave for 20 to 30 secs this will make the tortillas softer and more pliable
Fill the tortillas
- Divide the cheesecake mix into 4 portions
- Place warmed tortillas on the work surface and spoon in one portion of the cream cheese mix to the middle of the tortilla, add the strawberry pie filling on top of the cream cheese mix
Fold the tortillas

Air fry
- Place the filled tortillas into the air fryer basket, brush all sides with oil. Air fry at 360°F / 180°C for 8 to 10 mins.
- While the chimichangas are baking mix the cinnamon sugar and set aside
- When the cheesecake chimichangas are ready, bring them out of the air fryer and place on a plate.
- Next brush with melted butter then roll in cinnamon sugar. Serve as is or with your favorite topping
