Air fryer sausage, egg and cheese biscuit bombs
Biscuit bombs are a great way to start your day with a sumptuous breakfast that’s packed full of flavor yet super easy to make. Though we make them mostly on weekend mornings, you can make these any day of the week.
These air fryer biscuit bombs were made using store bought refrigerated dough but you can easily make these with homemade biscuit dough, no yeast pizza dough or the internet famous whole 30 two ingredient dough aka Greek yogurt dough.

- Fully cooked sausage links (I used amylu breakfast chicken sausages)
- Cheese
- Butter
How long to cook biscuit bombs in the air fryer
It takes about 10 mins to cook breakfast bombs in the air fryer at 350°F (180°C). However you should bear in mind air fryers vary in how they cook food. Other factors include temperature at which food is cooked in the air fryer and if you preheated or not.
The important thing is to use your discretion for recipes like this. Biscuit bombs are cooked when they are golden brown and the dough is no longer gooey for lack of the right description.

How to air fry breakfast biscuit bombs

Make the filling
Break eggs, whisk and season with salt and black pepper. Next add butter to a saucepan on medium heat. Add the beaten eggs into the pan when the butter begins to melt.
Stir eggs to scramble then add the cooked sausages to the scrambled eggs just before it sets. Let it cool completely before using
When the filling has cooled down completely, open the Pillsbury biscuit dough to reveal the 8 biscuits dough.
Roll out each dough to about 4 cm circle. Then fill with cheese and the sausage and egg.

Bring the edges of the circle together to form a pouch then pinch to keep all the contents in place

Place breakfast bombs in the air fryer basket Seam side down. Brush with melted butter. This will not only help brown and crisp up the dough, it will also prevent them from sticking together. Air fry at 350°F (180°C) for 8 mins first

Then Flip over and continue to air fry for another 2 to 3 mins. Bring it out of the air fryer and let it stand for a minute before serving because it will be super hot.

- Fresh fruit, such as berries or sliced melon
- A side of yogurt or cottage cheese
- A hot cup of coffee or tea
- Additional toppings, such as avocado, salsa, or hot sauce

Variations
Air fryer biscuits bombs can be varied based on their fillings. You could have breakfast biscuit bombs (savory) and dessert biscuit bombs (sweet)
Bacon egg and cheese breakfast bombs: These breakfast bombs are filled with air fryer bacon bits, scrambled eggs and cheese.
Egg and cheese biscuit bombs: filled with scrambled eggs and cheese.
Ham and cheese biscuit bombs: filled with ham and cheese
Pizza bombs: filled with pizza sauce, shredded mozzarella cheese and pepperoni
S’mores bombs: Filled with chocolate and mini marshmallows
Cherry bombs: filled with cherry pie filling
Apple pie bombs: filled with apple pie filling

How to store and reheat
Let the biscuit bombs to cool completely before storing in an airtight container in the refrigerator for up to 3 days
My preferred method to reheat these is the air fryer. This will help retain the flaky exterior of the biscuit bombs. Place in the air fryer and air fry at 350°F for 3 to 5 minutes or until heated through
Alternatively, microwave on high for 30 seconds to 1 minute or until heated through

- No need to preheat the air fryer
- I like to use flakey biscuit dough for this recipe however you can use the Pillsbury southern style or buttermilk biscuit dough for this.
- Don't overfill the biscuit bombs, you will find it difficult to close and it will likely burst open during cooking.
- Brushing the biscuit bombs with melted butter will help them brown and crisp up nicely in the air fryer.
- I recommend using a parchment paper to line the air fryer basket to prevent the dough from sticking.

Air fryer breakfast biscuit bombs
Ingredients
- 1 refrigerated biscuit dough (Pillsbury flaky dough)
For scrambled egg filling
- 4 Large eggs
- 4 breakfast links (chopped into bits)
- 2 Tablespoon butter (divided, 1 tablespoon to fry the eggs and 1 tablespoon melted and used to brush the biscuit bombs)
- salt and pepper to taste.
Instructions
Prepare the filling
- Break egg and season with salt and pepper.
- Add a tablespoon of butter to a skillet on low medium heat. When the butter begins to melt, pour in the beaten eggs.
- Just as it begins set, add the chopped sausages and break yo the egg to scramble them. Continue till scrambled eggs are cooked through.
- Let it cool completely before moving to the next step.
Fill the bombs
- Open the biscuit dough to reveal 8 discs.
- Flatten each disc to a diameter of 4 cm with a rolling pin or your hand.
- Add 1 Tablespoon of Shredded cheese to the center of the dough then 1 Table spoon of the scrambled eggs with sausage.
- Gently pull the edges of the dough up and bring them together over the filling to form a pouch. Pinch to seal, then repeat process for the rest of the dough.
- Place biscuit bombs in a parchment paper lined air fryer basket or tray seam side down. Brush each with melted butter on all sides.
- Air fry at 350°F (180°C) for 8 mins then flip the biscuit bombs over and cook the other side for 2 to 3 mins.
- Remove from basket and let it sit for a minute before serving.
