What are Christmas potatoes?
Christmas potatoes are a traditional potato side dish that is often served during the holiday season in many parts of the world.
These are usually boiled or roasted potatoes that are served as a side dish with other holiday dishes such as roast turkey, ham, or roast beef.
These can be prepared in a variety of ways. They could be simply mashed potatoes, roasted, or boiled and seasoned with herbs, today i decided to make mine in the air fryer hassleback style with garlic butter and parsley.

- This recipe was made using the Cosori air fryer. I like that it comes in 3 colors, Black, Red and White (my favorite)

How long to cook Christmas potatoes in the air fryer?
I used red baby potatoes for this recipe and cooked it at 400°F/200°C for 22 mins and it was soft, tender and fluffy. You can add more time as needed if yours isn’t soft and fluffy at this time.
There are a few things to note, when cooking food in the air fryer including potatoes.
- Different brands of air fryers cook differently. Air fryers with higher wattage tend cook faster than the ones with lower wattage. If your potatoes aren’t ready in 20 mins, add a couple more minutes and repeat until it’s fork tender.
- Potato species cook differently. Waxy potatoes tend to take longer cook than non waxy potatoes. Red potatoes are waxy and tend to take longer to cook than russet potatoes. If using the creamer baby potatoes, it will also cook faster than red potatoes.
How to make Air fryer Christmas potatoes
This is an overview of the recipe with step by step photos. Scroll down to the end of this post for a printable recipe card with the amount of ingredients and full recipe instructions.
- Pat dry washed potatoes with paper towels. If using regular potatoes, slice off a thin layer from the bottom of each potato so it can stand upright. (This isn’t necessary for baby potatoes.)
- Place the potato on a cutting board and carefully slice it lengthwise into thin, even slices, stopping about ¼ inch from the bottom so the slices stay attached.
- Use a small spoon or spatula to gently fan out the slices. Repeat with the remaining potatoes.
- Mix Olive oil, melted butter, salt, garlic powder, ground rosemary, black pepper and dry parsley , set aside.
- Transfer potatoes to air fryer basket or rack sliced side facing up. Brush the potatoes with the seasoned butter mixture ensuring you concentrate in between the slices. Be careful not to break them apart.
- Air fry at 400°F / 200°C for 10 mins, shake basket or flip over whichever is easier. Then brush more seasoned butter on the potatoes. Continue to cook for another 10 to 12 mins or until potatoes are fork tender.

How to store and reheat
Let potatoes cool completely then store in an air tight container for in the refrigerator for up to 5 days. To reheat, transfer to a microwave safe bowl and warm at 20 secs intervals till warmed through.
Alternatively, use the air fryer which happens to be my preferred method. Place in the air fryer basket or rack and reheat at 400°F /200°C for up to 6 minutes or until warmed through.
Air frying Tips
- This was made in a non preheated air fryer. If you preheat, it will likely cook a couple of minutes faster so keep an eye on it.
- Ensure the garlic butter gets into the slices on the potatoes to ensure it’s seasoned.
- Brush more of the seasoned butter on the potatoes half way through cooking time and just before serving.

Air fryer Christmas potatoes
Ingredients
- 1.5 lbs Potatoes (I used red baby potatoes)
- 1 Tablespoon oil
- 2 Tablespoons butter
- ⅛ teaspoon salt
- 1 teaspoon Dry parsley
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon ground rosemary (Dry rosemary that has been blended)
Instructions
Prepare the baby potatoes

- Brush more seasoned butter before serving if you still have some left.
Notes
- No need to preheat.
- Creamy potatoes will likely cook in less than 20 mins. Start checking at 15 mins.
