Best potatoes for air fryer cottage fries
Like these Air fryer potato wedges, Russet potatoes are best for cottage fries they are called baking for good reason, they make crispy yet super fluffy and delicious potatoes.
Yukon gold and Idaho potatoes are great alternatives. If you don’t have any of these, you can use red potatoes or yellow potatoes. Those are waxy potatoes and not my first choice for baking because they take longer and don’t crisp up as much as russet potatoes.

To store leftovers, let the potatoes cool completely then store in an air tight container in the refrigerator for up to 3 days.
